Prepare a grill for medium-high heat. In a small bowl, mix the sugar and lime zest. Rub the mixture over both sides of the watermelon. Grill the watermelon slices until lightly charred in spots, 2 to 3 minutes per side. Transfer to a cutting board. Dollop the yogurt over the watermelon, then spread, leaving a 1-inch border. Top with the blueberries, coconut chips and mint leaves. Cut into wedges and serve.
