Grilled Scallions with Hard-Boiled Egg

  • 2 tbsp. red wine vinegar

  • 2 tsp. Dijon mustard

  • 1 tbsp. finely chopped shallot

  • 1/4 cup plus 2 tbsp. olive oil

  • 20 scallions (about 1/4 lb.)

  • 1 egg, hard-boiled and chopped

  • chopped fresh tarragon, for garnish


In bowl, whisk first 3 ingredients with 1/4 cup oil; season dressing. Brush scallions with remaining 2 tbsp. oil. Cook on grill or in grill pan over medium-high heat until scallions soften and grill marks form, 5 to 7 minutes. Transfer to platter; toss with dressing. Top with egg and tarragon.
