Grilled Eggplant "Steaks" with Herby Yogurt

Grilled Eggplant “Steaks” with Herby Yogurt

Servings: 4


  • 1 cup crumbled feta

  • 1 scallion, chopped

  • 1/4 cup each chopped fresh mint and dill, plus more for garnish

  • 6 tbsp. olive oil 

  • 1 large eggplant (about 20 oz.), cut lengthwise into 4 thick slices

  • 2 tsp. ground cumin 

  • chopped toasted walnuts, for sprinkling


In blender or food processor, puree feta, scallion, 1/4 cup each mint and dill, 2 tbsp. oil, and 1/4 cup water; season sauce. Brush eggplant with remaining 4 tbsp. oil. Sprinkle with cumin; season. Grill or broil until tender, 6 minutes per side. Top with sauce. Sprinkle with remaining herbs and nuts.
