  • In blender or food processor, puree feta, scallion, 1/4 cup each mint and dill, 2 tbsp. oil, and 1/4 cup water; season sauce. Brush eggplant with remaining 4 tbsp. oil. Sprinkle with cumin; season. Grill or broil until tender, 6 minutes per side. Top with sauce. Sprinkle with remaining herbs and nuts.
