Greens, Eggs & Ham Biscuits

Ingredients
- 2 tablespoons canola oil
- 4 slices Canadian bacon
- 1 small onion, minced
- 1 small bunch collard greens, stemmed and sliced
- 1 tablespoon cider vinegar plus 1 1/2 tsp.
- 4 large biscuits, split
- 4 fried eggs
Preparation
In skillet, heat 1/2 tsp. oil over medium-high. Brown bacon, 3 minutes per side; transfer to plate. In same skillet, cook onion in remaining oil over medium, 8 minutes. Add greens; cover and cook until tender, 5 minutes. Stir in vinegar. Fill biscuits with greens, bacon and eggs.
