Greek Diner Marinade

Ingredients

  • 1/2 cup EVOO, plus more for brushing
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh oregano
  • 2 teaspoons lemon zest
  • 1 teaspoon chopped fresh thyme
  • 2 cloves garlic, minced
  • double lamb chops (about 2 lbs.)

Preparation

In bowl, mix 1/2 cup EVOO and next 5 ingredients. Add lamb; let marinate in fridge 30 minutes. Pat lamb dry and brush with EVOO before grilling.
