Turmeric and paprika oil add just the right amount of heat to your classic hummus.
Mix It Up: In a food processor, puree 1 can (about 15 oz.) chickpeas (rinsed), 1/4 cup tahini, 3 tbsp. fresh lemon juice, 1 small clove garlic, 1 tsp. ground turmeric, 1/2 tsp. ground cumin, and 3 to 4 tbsp. ice water until smooth. With the machine running, drizzle in 2 tbsp. olive oil. Season with salt. Transfer to a bowl.
Top It Off:In a small skillet, heat 2 tbsp. olive oil over medium until warm. Off heat, whisk in 3/4 tsp. paprika. Drizzle the paprika oil over the hummus. Top with chopped pistachios, chopped parsley leaves, and chopped red onion.
