Golden Hummus with Paprika Oil

Turmeric and paprika oil add just the right amount of heat to your classic hummus.

  • Makes 1 3/4 cupsServings



  • 1 can (about 15 oz.) chickpeas (rinsed)

  • 1/4 cup tahini

  • 3 tbsp. fresh lemon juice

  • 1 small clove garlic

  • 1 tsp. ground turmeric

  • 1/2 tsp. ground cumin

  • 3 to 4 tbsp. ice water

  • 2 tbsp. olive oil

  • Salt


  • 2 tbsp. olive oil

  • 3/4 tsp. paprika

  • Chopped pistachios

  • Chopped parsley leaves

  • Chopped red onion


Mix It Up: In a food processor, puree 1 can (about 15 oz.) chickpeas (rinsed), 1/4 cup tahini, 3 tbsp. fresh lemon juice, 1 small clove garlic, 1 tsp. ground turmeric, 1/2 tsp. ground cumin, and 3 to 4 tbsp. ice water until smooth. With the machine running, drizzle in 2 tbsp. olive oil. Season with salt. Transfer to a bowl. 

Top It Off: In a small skillet, heat 2 tbsp. olive oil over medium until warm. Off heat, whisk in 3/4 tsp. paprika. Drizzle the paprika oil over the hummus. Top with chopped pistachios, chopped parsley leaves, and chopped red onion.
