- 1/2 cup flour
- 1/3 cup rolled oats
- 1 cup (packed) brown sugar
- 6 tablespoons butter, diced
- 5 cups 1/4-inch slices rhubarb
- 2 tablespoons chopped crystallized ginger
In bowl, mix flour, oats and 1/3 cup sugar. Using fingertips, rub in 4 tbsp. butter. In 8-inch baking dish, toss rhubarb with remaining ingredients. Sprinkle with oat mixture. Bake at 400 degrees until golden, 25 minutes.
