Ginger-Lime Truffles

  • 1/3 cup heavy cream
  • 3 tbsp. fresh lime juice
  • 3 tbsp. honey
  • 1 tsp. grated peeled fresh ginger
  • 8 oz. bittersweet chocolate, chopped
  • Natural unsweetened cocoa powder, grated chocolate, shredded coconut, and toasted sesame seeds, for coating truffles


In small saucepan, bring first 4 ingredients to simmer over medium. Add chocolate; whisk until melted. Freeze until firm, about 2 hours. Using teaspoon measure, scoop 24 mounds of truffle mixture onto parchment-lined baking sheet. Chill until firm, about 30 minutes. Roll into balls; roll in coatings. Serve chilled.
