Ginger-Lime Truffles

Ingredients
- 1/3 cup heavy cream
- 3 tbsp. fresh lime juice
- 3 tbsp. honey
- 1 tsp. grated peeled fresh ginger
- 8 oz. bittersweet chocolate, chopped
- Natural unsweetened cocoa powder, grated chocolate, shredded coconut, and toasted sesame seeds, for coating truffles
Preparation
In small saucepan, bring first 4 ingredients to simmer over medium. Add chocolate; whisk until melted. Freeze until firm, about 2 hours. Using teaspoon measure, scoop 24 mounds of truffle mixture onto parchment-lined baking sheet. Chill until firm, about 30 minutes. Roll into balls; roll in coatings. Serve chilled.
