Ginger-Apricot Granita

  • Fresh apricots, pitted
  • Apricot, or mango, nectar
  • Fresh ginger, grated


In blender, puree 4 parts pitted apricots with 3 parts apricot or mango nectar. Season with grated fresh ginger. Transfer to glass or ceramic baking dish and freeze 1 hour. Mash with fork. Freeze, stirring and scraping with fork every hour, until icy, about 3 hours.
