Fried Plantains with Avocado Sauce

  • 4 cups cilantro leaves
  • 2 avocados -- peeled, pitted and chopped
  • 1/4 cup fresh lime juice
  • 2 cloves garlic
  • 1 cup canola oil
  • 4 green plantains, peeled and sliced into 1-inch rounds


In food processor, puree first 4 ingredients; season. In skillet, heat oil over medium-high. Working in batches, fry plantains, turning once, until starting to brown, 4 minutes. Transfer to work surface. Using meat mallet, flatten plantains to 1/4 inch. Fry again until crispy and browned, 3 minutes; season.
