  • In skillet, cook butter over medium, swirling pan, until golden brown, 4 to 5 minutes. Coat six 3/4-cup ramekins with 2 tbsp. of browned butter, then 2 tbsp. sugar. Place peaches in ramekins. In bowl, whisk cream, eggs, egg yolks, flour, remaining browned butter, and remaining 2/3 cup sugar. Pour over peaches. Bake at 400° until custard is just set, about 20 minutes. Sprinkle with Chinese five-spice.
