Fresh Green Frittata

  • 8 ounces Brussels sprouts, thinly sliced
  • 8 scallions, chopped
  • 2 tablespoons butter
  • 10 eggs
  • 1/2 cup heavy cream
  • 5 ounces crumbled feta


In medium ovenproof skillet, cook Brussels sprouts and scallions in butter over medium until soft, 5 minutes; season. In medium bowl, whisk eggs and cream; stir in cheese. Season and pour into skillet. Bake at 450 degrees until golden and cooked through, 20 minutes.
