French Fish Stew

Ingredients

  • 1 bulb fennel, thinly sliced
  • 2 zucchini, quartered and sliced
  • 2 leeks, trimmed and thinly sliced
  • 5 tablespoons olive oil
  • 6 cups chicken stock
  • 8 ounces clam juice
  • 3/4 cup orzo
  • 1/2 cup white wine
  • 1 pound cod
  • Creme fraiche
  • Tarragon

Preparation

In pot, cook vegetables in oil over medium-high, stirring, until tender, 5 minutes. Add stock, clam juice, orzo and wine; simmer until orzo is al dente, 10 minutes. Add cod; cook, stirring, until fish is flaky, 5 minutes. Top with creme fraiche and tarragon.
