- 1 1 1/2 pound flank steak, at room temperature
Preheat grill to medium-high. Brush steak with EVOO; season with kosher salt and black pepper. Grill steak, turning once, until meat is firm to the touch, 4 to 6 minutes. If using gas grill, turn off the heat. If using charcoal, move steak to cooler part of the grill. Cook, turning once, to desired doneness, about 6 minutes more for medium-rare. Let rest 5 minutes, then slice against the grain.
