Ingredients

  • 8 eggs
  • 3 scallions, sliced on an angle
  • 2 tablespoons minced chives
  • 1 teaspoon minced tarragon
  • 2 teaspoons olive oil
  • 2 ounces crumbled feta

Preparation

In bowl, beat first 4 ingredients; season. In 10-inch ovenproof skillet, heat oil over medium-low. Add eggs, dot with feta and cook until bottom is golden, 4 minutes. Broil until just set, about 4 minutes.
