Fennel Slaw with Blood Orange Vinaigrette

- 1/4 cup blood orange juice
- 2 tablespoons EVOO
- Salt and pepper
- 2 cups shaved fennel
- 1 cup shredded celeriac
- 1/2 cup chopped parsley
- 1/3 cup chopped toasted walnuts
