In bowl, mix first 5 ingredients with half the cilantro; season. In processor, blend next 4 ingredients with yolks and 1/4 cup panko; season. Form mixture into 4 patties. Coat in lightly beaten egg whites, then remaining panko. In large skillet, heat oil over medium-high. Cook patties until browned, 5 minutes per side. Serve on pita, topped with salad and remaining cilantro.
