Start to Finish: 15 minutes
- 3 heads Belgian endive, leaves separated
- 1 pear, cored and sliced
- 1/3 cup crumbled blue cheese (we like Rogue Creamery Blue Cheese)
- 1 tbsp. olive oil
- 1 tbsp. Champagne vinegar
In a large bowl, toss the endive, pear, and blue cheese. Drizzle with the oil and vinegar; season with salt and pepper. Toss to coat.
