Endive Salad with Pears & Blue Cheese

Ingredients

  • 3 heads Belgian endive, leaves separated
  • 1 pear, cored and sliced
  • 1/3 cup crumbled blue cheese (we like Rogue Creamery Blue Cheese)
  • 1 tbsp. olive oil
  • 1 tbsp. Champagne vinegar

Preparation

In a large bowl, toss the endive, pear, and blue cheese. Drizzle with the oil and vinegar; season with salt and pepper. Toss to coat.
