Eggplant Sloppy Joes

Ingredients
- 4 cups diced eggplant
- 1 15 ounce can diced tomatoes
- 1 red bell pepper, diced
- 1/4 cup EVOO
- 2 tablespoons chopped basil
- 4 cloves garlic, minced
- 8 slices provolone
- 4 buns, split and toasted
Preparation
In skillet, cook first 6 ingredients over medium-high, stirring, until vegetables soften, 10 minutes. Season. Top with cheese; cook until melted, 1 minute. Divide eggplant mixture among buns.
