Pickled Red Onions

Don’t let that leftover red onion perish in your fridge. Pickle it!

  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 3/4 tsp. salt
  • 3/4 tsp. sugar
  • 12 peppercorns
  • Red Onion


In a jar, shake 1/4 cup each apple cider vinegar and water, 3/4 tsp. each salt and sugar, and 12 peppercorns until the salt and sugar dissolve. Add 1/2 red onion (thinly sliced) and any stray herbs. Chill for at least 30 minutes, shaking occasionally. Use it to top everything from avocado toast to roasted veggies. It’ll keep in the refrigerator for up to 2 weeks.
