  • In medium skillet, cook shallots in oil over medium until softened, about 2 minutes. In large bowl, toss 2 tbsp. shallot oil, corn, zucchini, and green beans. Grill over high heat, turning often, until charred in spots, 5 to 8 minutes for zucchini and green beans and about 12 minutes for corn. Cut kernels from corn cobs. Chop zucchini. In bowl, toss all vegetables with remaining shallot oil; season. Sprinkle with thyme.
