Easy Grilled Succotash

Go to the farmers' market, then make this gorgeously fresh side dish with green beans, corn, zucchini, shallots, and cherry tomatoes.

  • 1 tbsp. chopped shallots

  • 3 tbsp. olive oil

  • 2 ears corn, shucked

  • 1 zucchini (about 6 oz.), quartered lengthwise

  • 3/4 lb. green beans, trimmed

  • 6 oz. cherry tomatoes, halved

  • 2 tsp. chopped fresh thyme


In medium skillet, cook shallots in oil over medium until softened, about 2 minutes. In large bowl, toss 2 tbsp. shallot oil, corn, zucchini, and green beans. Grill over high heat, turning often, until charred in spots, 5 to 8 minutes for zucchini and green beans and about 12 minutes for corn. Cut kernels from corn cobs. Chop zucchini. In bowl, toss all vegetables with remaining shallot oil; season. Sprinkle with thyme.
