Basmati Rice with Raisins & Cashews
Looking for a way to wake up your rice? In this recipe, the grains are cooked with star anise, cinnamon, cardamom, and cloves—and topped with a tasty mix of toasted cashews and raisins.
Ingredients
1 cup basmati rice, rinsed
2 star anise pods
1 cinnamon stick
5 cardamom pods, cracked
5 whole cloves
1 tbsp. coconut oil
1/2 cup cashews
1/2 cup raisins
Preparation
1. In a small saucepan, combine the rice, star anise, cinnamon stick, cardamom, cloves, 1 3/4 cups water, and 3/4 tsp. salt. Bring to a boil. Reduce heat to low. Cover and cook until the rice is tender, about 15 minutes.
2. Meanwhile, in a medium skillet, heat the oil over medium. Add the nuts. Cook, stirring often, until lightly toasted, about 3 minutes. Add the raisins. Cook until the raisins are heated through and the nuts are golden brown, 1 to 2 minutes more. Remove the whole spices from the rice.
3. Fluff the rice with a fork and transfer to a bowl. Top with the nuts and raisins.
