  • Preheat the oven to 350°. Generously grease a 6-cup muffin tin or 12-cup mini-muffin tin with cooking spray. In a medium bowl, mix the sweet potato, carrot, eggs, flour, cinnamon, and ginger. Divide the batter evenly among the muffin cups, filling them to the top. Bake until firm, about 30 minutes for large muffins and about 15 minutes for mini-muffins. Let cool. Transfer to a plate. In a small bowl, mix the yogurt and honey. Spoon a dollop of honey yogurt on top of each muffin.
