DIY Pomegranate-Mint Sodas
This is a perfect picnic activity for kids. Make the syrup at home and pack it in the coolor with a big bottle of seltzer, then let the little ones mix up their own drinks.
Ingredients
1 1/2 cups sugar
1 1/3 cups chopped fresh mint leaves, plus sprigs for garnish
1 cup fresh lemon juice (from about 4 lemons)
1 cup pomegranate juice
About 2 liters seltzer
Preparation
1. In a large saucepan, bring the sugar, mint leaves, lemon juice, pomegranate juice, and 1 cup water to a simmer over low heat, stirring just until the sugar dissolves. Remove from heat. Let steep for 1 hour. Using a fine-mesh strainer, strain the syrup into a qt.-size jar with a lid. Cover the syrup and refrigerate.
2. To make the sodas, fill 8 glasses with ice. Pour 2 oz. of syrup into each glass. Top with the seltzer. Garnish with the mint sprigs.
