Deviled Eggs with Pink Peppercorn Mayo & Microherbs

Servings: Makes 24 deviled eggs

Ingredients

  • 1/2 cup mayonnaise

  • 3 tbsp. chopped fresh chives

  • 2 tsp. pink peppercorns, crushed

  • 1 tsp. lemon zest, plus 1 tsp. juice (from 1 lemon)

  • 12 hard-boiled eggs, peeled and halved

  • 1/2 cup microherbs (such as amaranth)

  • Flaky sea salt, for garnish

Preparation

In bowl, mix mayonnaise, 2 tbsp. chives, 1 tsp. pink peppercorns, and lemon zest and juice; season. Spread mayonnaise on egg halves. Garnish with microherbs, remaining chives, and peppercorns. Garnish with sea salt.
