Curried Tofu Scramble

Ingredients
- 1 tablespoon canola oil
- 2 scallions, sliced
- 12 ounces extra-firm tofu, pressed dry, then crumbled
- 1 1/2 teaspoons curry powder
- 3 tablespoons mango chutney
- 1/4 cup cilantro
Preparation
In nonstick skillet, heat oil over medium-high. Cook scallions 2 minutes. Stir in tofu and curry powder. Cook, without stirring, 4 minutes. Season. Top with chutney and cilantro.
