Cucumber Mule

  • 2 small Persian cucumbers
  • 3-inch piece peeled fresh ginger
  • 2 1/2 tablespoons sugar
  • 2 1/2 tablespoons water
  • 6 ounces vodka
  • 3 ounces cucumber juice
  • 2 ounces fresh lemon juice
  • 1 ounce ginger juice
  • 1 ounce fresh lime juice
  • Seltzer
  • Cucumber ribbons, for garnish


In a blender, puree cucumbers; strain. Grate ginger; squeeze pulp. In a cocktail shaker, shake sugar and water until sugar dissolves. Add vodka, cucumber juice, lemon juice, ginger juice and lime juice. Cover and shake vigorously. Strain into 4 glasses filled with crushed ice. Top each with a splash of seltzer and garnish with cucumber ribbons.
