Cucumber Mojito

Ingredients

  • 5 limes, quartered
  • 5 sprigs mint
  • 2 1/2 ounces gold rum
  • 5 ounces Mint Simple Syrup
  • 7 ounces light rum
  • 12 ounces green apple juice (simmer 2 chopped green apples with 2 tbsp. water, then puree and strain)
  • 12 ounces cucumber juice (puree six 7-oz. cucumbers, then strain)
  • 15 ounces club soda
  • 10 long cucumber slices

Preparation

In a punch bowl, muddle the lime and mint leaves. Stir in the next 5 ingredients. Cover and refrigerate until cold. To serve, ladle into ice-filled rocks glasses; top with club soda and garnish with cucumber.
