Crudite Platter Hash

Ingredients
- 2 tablespoons olive oil
- 2 1/2 cups chopped mixed raw vegetables
- 1 small chopped onion
- 1 clove chopped garlic
- 1 1/2 teaspoons paprika
- Fried eggs
Preparation
In a skillet, heat olive oil over medium-high. Add raw vegetables, onion, garlic and paprika. Cook, stirring often, until tender, 12 to 15 minutes; season. Divide between 2 plates and top with fried eggs.
