Ingredients

  • 1/2 cup mayo
  • 1/3 cup chopped dill pickles, plus 2 tsp. pickle juice
  • 4 boneless, skinless chicken thighs (1 lb. total)
  • 1/2 cup buttermilk
  • 2 cups seasoned dried breadcrumbs
  • Canola oil
  • 4 potato rolls, toasted
  • Lettuce
  • Sliced red onion

Preparation

In bowl, mix mayo, pickles and pickle juice. Season chicken; coat in buttermilk then breadcrumbs. In skillet, heat 1/2 inch oil over medium-high. Cook chicken through, 2 to 3 minutes per side. Build sandwiches with all ingredients.
