  • 2 persian cucumbers
  • 1/4 cup goat cheese
  • 1 tablespoon chopped fresh mint
  • 1 cup blueberries


Trim cucumber ends, then cut crosswise into 1-inch pieces. Scoop out most of seeds, leaving bottoms to form cups; season. Fill cucumber cups with cheese, mint and blueberries.
