  • In large bowl, whisk first 3 ingredients and 3/4 tsp. salt. In medium bowl, whisk cottage cheese, milk, eggs, lemon zest, and vanilla; mix into dry ingredients. In skillet, cook half-cupfuls of batter over medium heat until browned and cooked through, about 5 minutes per side. In saucepan, cook berries over medium heat, stirring often, until juices release, about 5 minutes. Top pancakes with berry compote. Dust with confectioners’ sugar.
