Cornmeal-Crusted Onion Rings with BBQ Mayo
Ingredients
- 3 cups vegetable oil
- 1 cup cornmeal
- 3/4 cup milk
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon cayenne
- 1 large onion, sliced 1/2 inch thick, separated into rings
- 1/2 cup mayo
- 1/4 cup barbecue sauce
Preparation
In pot, heat oil over medium. In bowl, whisk next 5 ingredients; season. Coat onion rings in batter; fry in batches until golden, 3 minutes. Mix mayo with barbecue sauce.
