Corn Bread Mini-Muffins

Ingredients

  • Cooking spray
  • 2/3 cup yellow cornmeal
  • 1/3 cup whole-wheat pastry flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup fat-free evaporated milk
  • 2 1/2 tablespoons honey
  • 2 tablespoons unsalted butter, melted

Preparation

Preheat oven to 400 degrees . Coat 24 nonstick minimuffin cups with cooking spray. In bowl, whisk cornmeal, flour, baking powder and salt. In large bowl, whisk eggs, milk, 1 1/2 tbsp. honey and butter; stir in dry ingredients. Spoon into muffin cups. Bake until tester comes out clean, 9 to 10 minutes. Let cool 10 minutes; remove from pans. Drizzle with 1 tbsp. honey.
