Coconut Cod with Rice Noodles

Ingredients

  • 1 can (13.5 to 14 oz.) light coconut milk
  • 1 cup chicken stock
  • 3 tablespoons paper-thin slices fresh lemongrass
  • 1 tablespoon fish sauce
  • 1 teaspoon turmeric
  • 4 cod fillets (6 oz. each)
  • 10 ounces frozen shelled edamame
  • 8 ounces pad thai rice noodles, cooked
  • Torn basil
  • Sliced red chile
  • Lime wedges

Preparation

In saucepan, boil first 5 ingredients, 5 minutes. Simmer cod and edamame over medium until fish is flaky, 8 minutes. Serve over noodles. Top with basil, chile and squeeze of lime.
