Classic skillet hash

  • 2 pounds potatoes, cubed
  • 1 onion, chopped
  • 4 tablespoons butter
  • 1 red bell pepper, chopped
  • 8 eggs
  • Chopped parsley


In skillet over medium, cook potatoes and onion in butter, covered, 7 minutes. Add bell pepper. Season, cover, and cook 3 minutes. Uncover; cook over medium-high until tender, 8 minutes. Add eggs, cover and cook 3 minutes. Top with parsley.
