Citrus Rice Pudding
Your favorite childhood dessert just got a seriously delicious upgrade.
Ingredients
1 cup jasmine rice
3 cups half-and-half
6 tbsp. sugar
1/2 tsp. ground cinnamon, plus more for dusting
1 blood orange—zested, peeled, and cut into segments
1 Meyer lemon or 1 small grapefruit—zested, peeled, and cut into segments
1 tsp. pure vanilla extract
Fresh mint leaves, for garnish
Preparation
In medium saucepan, bring rice and 1 cup water to boil over high. Reduce heat to medium-low; cover. Cook until water is absorbed, about 8 minutes. Add half-and-half, sugar, 1/2 tsp. cinnamon, and citrus zests. Cook over medium-high, stirring often, until rice is tender, 10 minutes. Stir in vanilla. Divide among bowls. Top with citrus segments, mint, and more cinnamon.
