In large skillet, heat oil over medium-high. Add pork, vinegar, garlic, paprika, cumin, and cayenne; season. Cook, breaking up pork with a spoon, until cooked through, about 5 minutes. Add chickpeas; cook until warm, about 5 minutes. Divide among tortillas. Top with onion, cilantro, and sour cream.
