Cheater’s Chorizo & Chickpea Tacos

  • 1 tbsp. canola oil

  • 1 lb. ground pork

  • 1 tbsp. apple cider vinegar

  • 2 cloves garlic, chopped

  • 1 1/4 tsp. smoked paprika

  • 3/4 tsp. ground cumin

  • 1/4 tsp. cayenne

  • 1 can (about 15 oz.) chickpeas, rinsed

  • 8 corn tortillas, toasted in skillet

  • chopped red onion, fresh cilantro sprigs, and sour cream, for garnish


In large skillet, heat oil over medium-high. Add pork, vinegar, garlic, paprika, cumin, and cayenne; season. Cook, breaking up pork with a spoon, until cooked through, about 5 minutes. Add chickpeas; cook until warm, about 5 minutes. Divide among tortillas. Top with onion, cilantro, and sour cream.
