- 1/3 cup mayonnaise
- 2 tablespoons buttermilk
- 1/2 teaspoon grated lime zest plus 2 tbsp. juice
- 2 hearts of romaine (1 lb. total), chopped (8 cups)
- 1 English hothouse cucumber, chopped (4 cups)
- 1 pint cherry tomatoes, halved
- 2 cups chopped peeled jicama
- 2 avocados, chopped
In a small bowl, whisk the mayonnaise, buttermilk, zest and juice. Season the dressing with salt and pepper.
In a large bowl, toss the remaining ingredients with the dressing. Season generously.
