Chopped Salad with Creamy Lime Dressing

  • 1/3 cup mayonnaise
  • 2 tablespoons buttermilk
  • 1/2 teaspoon grated lime zest plus 2 tbsp. juice
  • 2 hearts of romaine (1 lb. total), chopped (8 cups)
  • 1 English hothouse cucumber, chopped (4 cups)
  • 1 pint cherry tomatoes, halved
  • 2 cups chopped peeled jicama
  • 2 avocados, chopped


In a small bowl, whisk the mayonnaise, buttermilk, zest and juice. Season the dressing with salt and pepper.

In a large bowl, toss the remaining ingredients with the dressing. Season generously.
