Coco-Mango Waffles

Ingredients
- 3/4 cup coconut milk
- 1/2 cup sugar
- 3 egg yolks
- 1 egg
- 1/8 teaspoon ground cardamom
- A pinch salt
- 4 frozen Belgium waffles, toasted
- 1 mango, peeled and thinly sliced
Preparation
In a double boiler over simmering water, whisk coconut milk, sugar, yolks, egg and cardamom until thickened, 10 minutes; stir in salt. Top waffles with custard and mango.
