Chipotle Chicken Salad

  • 1 1/2 pounds boneless, skinless chicken breast
  • 3/4 cup mayo
  • 1/4 cup minced canned chipotles
  • 4 pitas
  • 1/4 cup thinly sliced red onion
  • 1/2 cup cilantro sprigs


In pot, cover chicken with water; bring to boil. Reduce heat and simmer until cooked, 15 minutes. Drain; chop. In bowl, combine chicken, mayo and chipotles; season. Stuff pitas with chicken, onion and cilantro.
