Chickpea Toss

Ingredients

  • 2 cans (15 to 15.5 oz. each) chickpeas, rinsed
  • 1 cup chopped fresh parsley
  • 1/3 cup chopped red bell pepper
  • 1/3 cup chopped red onion
  • 1/4 cup thinly sliced fresh mint
  • 2 tablespoons EVOO
  • 3 cloves garlic, chopped
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon crushed red pepper

Preparation

In large bowl, toss all ingredients. Season generously.
