Southwest Chicken Caesar Salad
Put the dressing in a little container, toss the rest of the stuff in a resealable container—and make your co-workers jealous come lunch time.

Ingredients
1/2 cup (packed) fresh cilantro leaves
1/3 cup EVOO
1/4 cup shredded Parmesan, plus more for topping
3 tbsp. fresh lemon juice
2 tsp. chipotle hot sauce
1 clove garlic, peeled
2 hearts of romaine, chopped
2 cups Cilantro Rice
1 container shredded Garlic & Coriander Roasted Chicken
1 can (about 15 oz.) corn kernels, drained
Preparation
In mini food processor, puree cilantro, oil, 1/4 cup cheese, lemon juice, hot sauce, and garlic; season dressing. In large bowl, toss romaine, rice, chicken, corn, and dressing; season. Top with more cheese.
