- Vegetable oil
- Boneless chicken breast, cut into bite-size pieces
- Bell pepper, chopped
- Tangy-sweet apples, such as Jonagold, cored and chopped
- Jarred coconut curry sauce
- Rice, cooked
- Chopped cilantro
In a skillet, heat vegetable oil over medium-high. Add bite-size pieces of boneless chicken breast and cook until browned, about 5 minutes; add chopped bell pepper and tangy-sweet apples, such as Jonagold. Add jarred coconut curry sauce and simmer until chicken is cooked through and apples are tender, about 10 minutes. Serve over rice and top with cilantro.
