Cherry Turkey Sammies

Ingredients
- 6 tablespoons cherry preserves
- 1 1/2 tablespoons Dijon mustard
- 1 teaspoon sherry vinegar
- 8 slices bread
- 8 slices Fontina
- 2 ounces arugula
- 3/4 pound sliced turkey
- EVOO, for brushing
Preparation
In bowl, mix first 3 ingredients; spread onto 4 slices bread. Top with cheese, arugula, turkey and remaining bread; brush with EVOO. On griddle, cook over medium, 4 minutes per side.
