Ingredients

  • 5 slices ciabatta
  • 3/4 cup EVOO
  • 1 lb. cherries, pitted
  • 2 red bell peppers, seeded and chopped
  • 2 jalapeños, seeded and chopped
  • 6 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/2 Persian cucumber, quartered and sliced
  • Ice cubes

Preparation

Brush ciabatta with 1/4 cup EVOO; grill over high until charred, 5 minutes per side. In blender, puree next 5 ingredients with 1 slice ciabatta and 1/4 cup oil; strain. Season and chill. Garnish with cucumber, ice and 1/4 cup EVOO. Serve with remaining bread.
