- 1 5 ounce package baby spinach
- 1/2 teaspoon fresh lemon juice
- 3 egg whites, beaten
- 1/4 cup shredded Gruyere
- A pinch crushed red pepper
- 1 small crusty roll
- 1 orange
Lightly coat a small ovenproof ramekin with cooking spray. In a bowl, microwave spinach, lemon juice and a pinch salt on high until spinach wilts, about 45 seconds. Transfer spinach to the ramekin and top with egg whites, cheese and pepper flakes. Bake at 350 degrees until set, about 30 minutes. Let stand 5 minutes. Serve with roll and orange.
