In large saucepan, bring milk, 1 1/4 tsp. salt and 1 3/4 cups water to a boil over high. Whisk in grits. Bring to a boil, whisking constantly. Reduce heat to low and cook, whisking often, until creamy, about 4 minutes. Stir in butter and 2 oz. (about 1/4 cup) goat cheese. Divide among bowls. Top with remaining goat cheese, chives and hot sauce, if desired.
