Charred Veggie Flatbreads
When you want to get your veggie fix but you're sick of salads, turn to this easy grilled flatbread, made with all your summer faves.
Ingredients
1 yellow bell pepper
1 avocado, halved and pitted
1 jalapeño chile
1 onion, sliced into thick rounds
2 tbsp. olive oil
4 naan
1/2 cup mayonnaise
1 tomato, cut into wedges
1/2 cup micro cilantro or fresh cilantro sprigs
Preparation
In large bowl, toss first 5 ingredients. Grill over high heat, turning often, until charred in spots, about 3 minutes for avocado and 5 to 8 minutes for remaining vegetables. Slice bell pepper into strips and chile into rings. Separate onion into rings. Grill naan until slightly charred, about 2 minutes. Spread naan with mayonnaise. Peel and slice avocado. Top naan with avocado, grilled vegetables, tomato, and cilantro; season.
