Cauliflower-Gruyere Flatbreads

  • 1 small head cauliflower (3/4 lb.), cored
  • 1 clove garlic, chopped
  • 1/4 cup heavy cream
  • 4 naan breads, toasted
  • 6 ounces grated Gruyere
  • 2 teaspoons fresh thyme leaves


In food processor, pulse half the cauliflower and the garlic to coarse crumbs. Stir in cream; season. Spread on naan. Separate remaining cauliflower into small florets; sprinkle over naan. Top with cheese. Broil until melted, about 6 minutes. Sprinkle with thyme.
